Don’t miss a “beet”!
Beets are hands down one of the healthiest foods you can eat as a whole and/or juice. If you never included beets in your diet or haven’t tried beet juice before, now is the time to start!
Did you know that many ancient cultures used beets and beet leaves as medicine, due to their nutritional and therapeutic value?
Some of their nutritional values are vitamins, like vitamin C, vitamin B6, beta carotene; minerals like magnesium, iron, copper, phosphorus; and organic compounds like dietary fiber, while also being a source of beneficial flavonoids.
They are very low in calories, with no cholesterol, but they are high in sugar.
Beets offer a variety of health benefits including boosting energy; lowering blood pressure; decreasing the risk of certain cancers; improving indigestion, constipation, gall bladder disorders and decreasing the risk of kidney disorders. They also help to prevent macular degeneration, improve blood circulation, prevent cataracts, mediate respiratory problems and aid in skin care.
Although there are many products on the market that promise to protect your skin from free radicals damage, beet root juice does an amazing job protecting from the inside out. There is no need to reach for pills, if you can get the same or better effect out of a delicious glass of beet juice.
We all know red beets. But beets can be red, purple, golden and pink in color. They are delicious when they are fresh and can be eaten raw, they also can be pickled, roasted, sautéed or added to soups and salads.
So let’s talk about pickled beets for a moment:
Pickled beets taste good and are super healthy because the process of pickling preserves the majority of all their nutrients. There’s no doubt that fresh is always better. However, beets may not always be available. This is why pickling was developed to preserve the freshness of food for later consumption.
Pickling is a “healthy” fermentation process, it creates prebiotics and probiotics. Prebiotics and probiotics are found in all fermented foods. Probiotics are the “good” bacteria and allow our body a faster and higher absorption of nutrients, while prebiotics are linked to promoting the growth of helpful bacteria in your gut. These active cultures help to balance your gut flora, which is crucial for overall wellbeing.

We use fresh beets, that we roast in house, then peel, slice and pickle them lightly with rice wine vinegar!
